Cowboy Spaghetti

A few weeks ago we asked you which recipe you would like to see come out of the Lone Peak Bison recipe vault. When you just couldn’t choose between bison chili and cowboy spaghetti, we decided to take both recipes out of retirement and bring them back in our blog.

Our second delicious recipe is cowboy spaghetti. This is a southwest inspired dish full of traditional flavors like onions, bell peppers and tomato sauce. This comfort recipe mixes perfectly with the savory delicious flavors of Lone Peak Bison, without being overpowering. Try it for dinner tonight and watch it become an instant family classic.

Cowboy Spaghetti - Out of the Vault

Ground bison is naturally lean and full of flavor. It is a breeze to prepare in this delicious southwest inspired cowboy spaghetti.

Ingredients

  • 1 lb (1 package) ground bison meat
  • 1 can of mushrooms
  • 1 lb spaghetti noodles
  • 1 large onion - chopped
  • 2 medium bell peppers - chopped
  • 3 cloves of garlic - minced
  • 4 cups tomato sauce
  • 16 oz can creamed corn
  • 1 cup parmesan cheese - grated

Instructions

  1. Boil spaghetti until just tender. Drain and rinse under cold water.

  2. Preheat oven to 350°.

  3. In a large skillet, cook ground bison, onion, bell peppers and garlic over medium heat until bison loses its pink color.

  4. Stir in tomato sauce, creamed corn, salt and pepper. Bring to a simmer stirring often.

  5. In a baking dish, combine cooked spaghetti, bison mixture, and 1 cup of parmesan cheese. Toss to mix and then sprinkle remaining cheese over top.

  6. Bake until sauce is bubbling, about 30 minutes.
