Ingredients

  • 16 oz Marketside - Lone Peak Bison
  • 1 cup sweet onions - finely chopped
  • 1 tablespoon garlic - minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 cup brown sugar
  • 1 cup tomato paste
  • 1 cup ketchup
  • sesame buns - for serving

Instructions

Slow Cooker Method:

  1. Start by browning the bison meat in a skillet over medium-high heat. When there is still a tiny bit of pink in the skillet, add the onion and garlic. Continue to stir until the onions begin to soften and the garlic becomes fragrant, about 5-6 minutes. Season with salt and pepper. Remove from the heat.

  2. Transfer the browned meat to a slow cooker pot. Stir in the Worcestershire sauce, Dijon mustard, pickle relish, chili powder, cumin, coriander, brown sugar, tomato sauce, and ketchup. Stir well to combine.

  3. Cook the sloppy joe filling for 3-4 hours on low, or 1-2 hours on high. Stir occasionally. Serve the hot sloppy joe filling on toasted sesame buns. Enjoy!

Alternative Stovetop Cooking Method:
